"The idea is to recreate a classic Chinese street food: Liang Mian, means cold noodle.
It’s the most favourite food for spring and summer time. Simple as the name, it’s just cold noodle with saucy dressing and some sliced vegetables. But the flavour is rich and refreshing, simple but satisfying.
We will also match 1 side dish and 1 soup with the noodle to make it a set. That’s how we eat it in China as well. Sth soft, sth crunchy, sth dry, sth soupy."
